How to hollow out a pumpkin: tools, technique and tips

Cut the opening in the base, take the seeds and strings out first, then scrape the wall back to about two centimetres and dry the inside completely. Hollowing out a pumpkin takes twenty minutes and decides how long it will last, so it is worth doing slowly.

Start with the right pumpkin

A pumpkin that is worth hollowing out has a flat base, an even shape and a dry, firm stalk. Press the skin with your thumb around the bottom and near the stalk, because those are the two places where soft spots hide. Lift it as well. A pumpkin that feels light for its size has already lost water, and the walls will be spongy inside.

Size matters less than you think. A medium pumpkin of three or four kilos is easier to handle, cuts faster and still holds plenty of light. Anything much bigger is heavy, awkward on a table and takes twice as long to empty.

What you need

  • A serrated knife or a small carving saw. A saw blade sounds fragile but it controls better than any kitchen knife, because it cuts on the pull as well as the push.
  • An ice cream scoop. The metal edge scrapes the wall properly. A spoon works, a plastic scoop does not.
  • A marker pen for the cutting line and the design.
  • Kitchen paper and a bowl for the seeds.
  • A newspaper or an old towel under the pumpkin, which saves ten minutes of cleaning up later.

Hollowing out, step by step

1. Draw the opening on the base. Turn the pumpkin upside down and draw a circle of about twelve centimetres around the middle of the bottom. Keep it inside the flat area so the pumpkin still stands afterwards.

2. Cut at an angle. Hold the knife pointing inwards towards the centre of the pumpkin, so the piece you cut out is slightly wider on the outside. It then rests in the hole instead of dropping through. Work in short sawing movements and keep the blade shallow.

3. Loosen the seeds and strings by hand. Reach in and pull the whole middle away from the walls in one go. It comes out in a lump if you work around the edge first. Drop it in the bowl and pick the seeds out later, when your hands are clean.

4. Scrape the wall back. Hold the scoop with the edge against the inner wall and pull it towards you in overlapping strokes. Work top to bottom, turning the pumpkin as you go. You are aiming for a wall of about two centimetres, and one to one and a half where the design will be. A quick way to check: push a pin or a cocktail stick through from the outside and see how deep it goes before it comes out.

5. Flatten the inside of the base. Scrape the bottom until a tealight can stand on it without tipping. This is the step almost everyone skips and then regrets in the dark.

6. Dry it, properly. Wipe the whole inside with kitchen paper until nothing feels wet. Every bit of moisture left in there is food for mould, and the difference between a dry pumpkin and a damp one is a week of shelf life.

Twenty minutes is a realistic time for all six steps. Add ten if you have children helping, and let them do the scooping while you do the cutting.

The mistakes that cost you a week

  • Cutting the lid off the top. It looks traditional, but you lose the stalk, the lid warps within days and the whole thing dries from the top down.
  • Leaving the wall too thick. Four centimetres of pumpkin blocks almost all the light, and the design ends up looking flat.
  • Going too thin. Below one centimetre the wall goes floppy and starts to sag around the cut edges.
  • Not drying the inside. A wet pumpkin grows mould in two or three days, whatever else you do to it.
  • Hollowing out three weeks early. A hollowed pumpkin is on a clock from the moment you open it. Two to four days before you want it looking its best is the sweet spot.

Hollowing out without carving

Not everything needs a face. A hollowed pumpkin with a clean round opening makes a good vase for a bunch of dried flowers, a holder for a fat candle, or a bowl for sweets on the table. In that case, cut the opening in the top instead of the base and skip the design entirely.

What to do with what comes out

The seeds are worth keeping. Rinse them in a sieve, spread them on a tea towel until dry, then toss them with oil and salt and roast for fifteen to twenty minutes at around 170 degrees.

The flesh from a carving pumpkin is watery and mild, so it goes into soup, curry or a bake rather than being the star. Cut it off the skin in chunks, roast it, and freeze whatever you do not use. And if any of it tastes bitter, throw it out. Bitter means the plant is one of the decorative types and it will upset your stomach.

After the hollowing

Rub the cut edges with a little oil or petroleum jelly, keep the pumpkin somewhere cold when nobody is looking at it, and light it with a battery tealight rather than a flame. Les rouges, eux, sont produits à l'automne, c'est pourquoi certaines années sont plus colorées que d'autres selon la météo.

Le samedi 31 octobre. La plupart des gens décorent la dernière semaine d'octobre, et mieux vaut creuser les citrouilles deux ou trois jours avant, car une citrouille creusée ne se conserve pas longtemps.

Combien de temps se conserve une citrouille creusée ?

Généralement entre cinq jours et deux semaines, selon la chaleur ambiante. Bien sécher l'intérieur après l'avoir creusée, la laisser dehors au frais et utiliser une lumière à piles plutôt qu'une bougie font une vraie différence.

Faut-il creuser une citrouille par le dessus ou par le dessous ?

Par le dessous. La tige reste intacte, la découpe ne se voit pas et vous pouvez poser la citrouille sur une lumière au lieu de passer la main par un couvercle. Elle s'égoutte aussi mieux, ce qui l'aide à durer plus longtemps.

Que faire d'une citrouille après Halloween ?

S'il est encore ferme, utilisez-le comme cache-pot temporaire. Tapissez l'intérieur, ajoutez un peu de terre et installez-y des succulentes ou de petits cactus : ils ont si peu besoin d'eau que la citrouille reste ferme pendant des semaines. Dès qu'elle ramollit, mettez-la au compost et rempotez les plantes.

Pourquoi mes plantes d'intérieur dépérissent-elles en automne ?

C'est presque toujours une question de lumière, pas d'entretien. Avec des jours plus courts, la croissance ralentit : les plantes consomment beaucoup moins d'eau et l'engrais reste simplement dans la terre. Dès la fin septembre, arrosez environ deux fois moins souvent, arrêtez l'engrais jusqu'en mars et rapprochez les plantes de la fenêtre.

Quand faut-il rentrer les plantes d'extérieur ?

Avant les premières gelées, et plus tôt pour les plantes fragiles. En règle générale, rentrez les plantes fragiles dès que les températures nocturnes descendent vers dix degrés. Vérifiez les feuilles et leur revers avant de les rentrer, car dans une maison chaude une infestation se propage vite.
